By simply removing the backbone so the turkey lays completely flat, you allow the oven’s heat to circulate perfectly and cook the bird evenly. This game-changing method cuts your roasting time in half, locks in incredible juiciness across every square inch of breast meat, and guarantees 100% shatteringly crispy skin

Yield: 8–10 servings

Prep Time: 30 minutes | Cook Time: 75–90 minutes

Make-Ahead Secret:

Spatchcock and butter the turkey the day before. Leave it uncovered in your fridge overnight. This “dry brining” process dries out the skin perfectly, leading to elite, glass-like crispiness when roasted.

  • 3 tbsp Fresh herbs (finely chopped sage, rosemary, and thyme)

Step-by-Step Instructions

01 | Spatchcock the Turkey

Place the turkey breast-side down on a large cutting board. Using heavy-duty kitchen shears, cut closely along both sides of the backbone to remove it entirely.

Flip the turkey over so it is breast-side up. Press down firmly on the center of the breastbone with both hands until you hear a crack and it lays completely flat.

02 | Make the Truffle Compound Butter

In a bowl, vigorously mix the softened butter, truffle oil, chopped herbs, grated garlic, salt, and pepper until completely smooth.

While this juicy, herb-and-truffle-butter bird is bound to be the star of the show, a truly unforgettable feast needs a stellar supporting cast.

03 | Season Under the Skin

Gently slide your fingers under the skin of the turkey breasts and thighs to separate it from the meat. Rub about half of the truffle butter directly onto the meat beneath the skin.

04 | Season the Exterior

Pat the skin completely dry with paper towels (moisture is the enemy of crispy skin). Slather the remaining truffle butter all over the outside of the skin.

05 | Roast

Scatter the sliced onions and blood oranges across a heavy roasting pan or a rimmed baking sheet lined with wire rack. Lay the flat turkey directly on top.

Roast at 400°F (205°C) for 75 to 90 minutes, or until an instant-read thermometer inserts into the thickest part of the thigh reads 165°F (74°C).

06 | Rest

Let the turkey rest for a full 20–30 minutes before carving to allow the juices to redistribute.

The Boujee Touch:

Garnish the final presentation platter with fresh, whole pomegranates cut in half, extra sprigs of charred rosemary, and a light drizzle of high-quality truffle oil right over the carved meat.
